Vegan Banana Muffins

Mashed banana is the perfect replacement for eggs in baking so this recipe is great if you are new to catering for allergies, are vegan or if you have lots of over ripe bananas in your fruit bowl! Hey everyone! Today I’ve made up a huge batch of cookie dough ready for baking tomorrow. Rhubarb and Cinnamon Crumble

     Lucky me! My friends dad gave me some lovely rhubarb from his allotment! There are lots of tasty things I could make with it (it goes well with lots of unlikely things apparantly) but I love classic rhubarb crumble so thought I’d go with that but with the added twist of cinnamon! John in his allotment!   Now, I think if you’re going to make a fruit crumble you have to have lots and lots of crunchy sweet topping! Flapjacks

  Who doesn’t love flapjacks?! Do you remember them at school? With hot custard? You had to have custard to soften it because without it you’d spend half an hour chiselling away with your spoon trying to break a bit off only for it to shoot across the room when you broke your way through! Haha!! These flapjacks require no chiselling (hurrah!) unless you over bake them… But they’ll still taste nice if you do!
